The trick to this shortcut, three-ingredient potato salad is all in the boil. Boiled with chicken bouillon, extra flavour and seasoning is cooked into the spuds, letting you toss them mayo for a lightning fast side dish.

Combine potatoes and chicken bouillon cube with enough water to cover in a large saucepan (4L) set over high. Bring to a boil, then reduce heat to medium. Cook until potatoes are fork-tender, about 10 minutes.

Drain potatoes, but do not rinse. Set aside to cool slightly, about 10 minutes.

Toss potatoes with mayonnaise in a large bowl. Serve chilled or at room temperature. Garnish with parsley and black pepper, if desired.
