Broccoli & Cheese Casserole Recipe
Position rack in centre of oven, then preheat to 400°F. Lightly spray an 11x7-in glass baking dish with oil.
Heat a large non-stick frying pan over medium-high. Add oil, then chicken. Cook, stirring often, until no pink remains, about 3 to 5 minutes. Add broccoli. Cook, stirring often, until broccoli begins to soften, about 2 to 3 minutes. Remove pan from heat.
Stir in soup, milk, rice, 1/4 cup cheese and half of green onions until combined. Scrape chicken mixture into prepared dish. (Make sure all rice is submerged in liquid. Add more milk, if needed.) Sprinkle remaining 3/4 cup cheese evenly overtop.
Bake until mixture is bubbling and starting to brown, about 35 to 45 minutes. Sprinkle with remaining green onions. Let rest 5 minutes before serving.
