Mac & Cheese with Veggies Recipe

Cheddar, swiss and parmesan combine to make this mac and cheese with veggies a rich and creamy family favourite— sure to convince your kids to eat the healthy stuff too. Oh, and you can get it on the table in just 40 minutes.

    Position rack in centre of oven, then preheat to 400°F. Spray a 9x13-in baking dish with non-stick cooking spray.

    Prepare dry soup mix following package directions in a large saucepan.

    Reduce heat to low, then stir in red pepper, cheddar and Swiss cheeses, 1/4 cup Parmesan cheese and curry powder. Stir until cheeses are melted. Stir in frozen vegetables and macaroni until coated. Scrape mixture into prepared dish. Sprinkle remaining 1/4 cup Parmesan cheese evenly overtop.

    Bake until top is golden-brown, about 20 minutes.
