Tex-Mex Grain Bowl Recipe

Enjoy a healthful blend of Mexican spices, a medley of vegetables, gooey cheese, and wholesome grains— baked to perfection for a flavoursome meal. Sprinkle this Tex-Mex grain bowl recipe with green onion and serve with guacamole or sour cream!

    Position rack in centre of oven, then preheat to 350°F.

    Prepare 7 grain medley following package directions, and adding Tex-Mex spice blend.

    Combine back beans and corn in a 9x13-in baking dish, spreading evenly on bottom. Top with layers of chicken, then green bell pepper, grain medley, salsa and cheese.

    Cover with foil and bake until heated through, about 25 minutes. Remove foil and broil until cheese is lightly browned, about 3 minutes. Sprinkle with green onions. Serve with sour cream and guacamole, if desired.
