    Position rack in centre of oven, then preheat to 350°F. Spray a 9x13-in baking dish with non-stick cooking spray.

    Whisk egg whites, buttermilk and margarine in a medium bowl until combined.

    Combine flour, carrots, cereal, brown sugar, orange zest, cinnamon, baking powder, baking soda, nutmeg and salt in a large bowl. Stir in buttermilk mixture until well combined. Scrape into prepared dish, smoothing top.

    Bake until a skewer inserted in centre of cake comes out clean, about 15 minutes. Transfer to a rack to cool completely. Cut into 24 squares. Store refrigerated in an airtight container.
