Easy Apple Pie Recipe
Line a 9-in pie plate with one pie crust.
Combine 1/2 cup sugar, flour, cinnamon and salt in a large bowl. Add apples and lemon juice. Toss to coat. Arrange apples in prepared pie crust, mounding in centre.
Lay second pie crust over apples and press edges down gently to adhere to lower crust. Fold overhanging crust over. Flute edges to seal. Cut a small hole in centre of pie to vent. Refrigerate pie 15 minutes.
Meanwhile, position rack in lower third of oven, then preheat to 425°F.
Brush pie with beaten egg. Sprinkle with remaining 1 tbsp sugar. Place pie on a baking sheet.
Bake 15 minutes. Reduce heat to 350°F. Continue baking until apples are tender, filling is bubbling and crust is golden, about 1 hour to 1 hour 15 minutes. Transfer to a rack to cool slightly.
Serve warm or at room temperature topped with ice cream, if desired.
