Something magical happens when deep spiced flavours like nutmeg and cinnamon are paired with the tang of apple and ricotta. One thing's for sure, though: there won't be one morsel left on the plate of this apple raspberry crumb cake recipe.

    Position rack in centre of oven, then preheat to 350°F. Lightly spray a 9-in springform pan or round metal cake pan with non-stick cooking spray.

    Whisk together flour, oats, sugar, cinnamon, baking powder, baking soda, nutmeg and salt in large bowl.

    Cut in butter and ricotta until crumbly. Reserve 1 1/2 cups of the oat mixture for topping.

    Combine sour cream and egg whites in a small bowl. Add to remaining oat mixture, stirring just until moistened. Spread batter over bottom and 1/2 inch up sides of pan.

    Combine apples, jam and flour in a medium bowl. Spoon apple mixture over batter. Sprinkle reserved oat mixture over apples.

    Bake until golden brown and centre is firm to the touch, about 50 to 55 minutes. Sprinkle with powdered sugar. Serve warm.
