Apple Streusel Recipe
Position rack in centre of oven, then preheat to 350°F.
Make the Filling: Combine granulated sugar, 1/4 cup melted margarine and cinnamon in an 8-in glass baking dish. Stir in apples until well coated.
Bake, stirring occasionally, until apples soften, about 10 to 15 minutes.
Make the Streusel: Meanwhile, combine 1/2 cup oats, 1/4 cup flour, brown sugar and remaining 3 tbsp melted margarine in a medium bowl until crumbly. Set aside.
Make the Batter: Combine remaining 1 cup flour, 1/2 cup oats, baking powder and salt in a medium bowl.
Whisk milk and egg in a large bowl. Stir in flour mixture just until dry ingredients are moistened. (Do not over-mix.) Spoon batter over warm apple mixture, spreading batter to edges of dish. Sprinkle reserved streusel evenly over batter.
Bake until a skewer inserted in centre of dish comes out with just a few moist crumbs clinging to it, about 25 to 30 minutes. Serve immediately.
