Apple Oatmeal Muffins
Position rack in centre of oven, then preheat to 400°F. Line a 12-cup muffin pan with paper liners.
For the Topping: Stir 1/4 cup oats, 1 tbsp brown sugar, margarine and 1/8 tsp cinnamon in a small bowl. all ingredients in a small bowl. Set aside.
For the Muffins: Combine remaining 1 1/2 cups oats, flour, baking powder, baking soda and remaining 3/4 tsp cinnamon in a large bowl.
Whisk applesauce, milk, oil, egg white and remaining 1/2 cup brown sugar in a medium bowl.
Add applesauce mixture to flour mixture. Stir just until dry ingredients are moistened. (Do not over mix.) Divide batter between muffin cups. Sprinkle with reserved topping, patting gently.
Bake until deep golden brown and a skewer inserted into muffins comes out clean, about 20 to 22 minutes. Transfer to a rack to cool for 5 minutes, then remove muffins from pan. Serve warm.
