Pear, Blue Cheese & Arugula Salad With Striploin Steak

This all-in-one meal is easy and elegant. Ready in just 25 minutes, the steak requires the most work (sear both sides and bake for about four minutes—that's it). Top your arugula salad with striploin steak slices, juicy pear, almonds and tangy blue cheese. Tip: Blue cheese can be substituted for goat cheese.

    Position rack in centre of oven, then preheat to 450°F.

    Season steak on both sides with 1/4 tsp each salt and pepper. Heat an oven-proof frying pan over medium-high. Add oil, then steak. Cook steak until seared, 2 minutes per side, then transfer pan to oven. Cook until an instant-read thermometer inserted into centre reads 145°F for medium-rare, about 4 minutes. Transfer steak to a cutting board and let rest for 5 minutes.

    Meanwhile, whisk olive oil, vinegar, mustard, maple syrup and remaining 1/4 tsp each salt and pepper in a large bowl.

    Add arugula and pear. Toss until well coated. Divide between 2 plates. Slice steak thinly against the grain. Top salad with steak, then sprinkle with blue cheese and almonds.
