
Pear, Blue Cheese & Arugula Salad With Striploin Steak

Position rack in centre of oven, then preheat to 450°F.

Season steak on both sides with 1/4 tsp each salt and pepper. Heat an oven-proof frying pan over medium-high. Add oil, then steak. Cook steak until seared, 2 minutes per side, then transfer pan to oven. Cook until an instant-read thermometer inserted into centre reads 145°F for medium-rare, about 4 minutes. Transfer steak to a cutting board and let rest for 5 minutes.

Meanwhile, whisk olive oil, vinegar, mustard, maple syrup and remaining 1/4 tsp each salt and pepper in a large bowl.

Add arugula and pear. Toss until well coated. Divide between 2 plates. Slice steak thinly against the grain. Top salad with steak, then sprinkle with blue cheese and almonds.
