Step aside, wheat tortillas (don't worry — we'll save you for taco night). This veggie-forward recipe uses lush leaves of lettuce to wrap everything up. Fill with grains and top with saucy ginger beef, peppers, carrots, peanuts and onions.

    Prepare grains medley in a medium saucepan following package directions. Set aside.

    Heat a large non-stick frying pan over medium. Add oil, then ground beef, onion, garlic and ginger. Cook, stirring occasionally, until beef is no longer pink, about 5 minutes.

    Add honey-garlic sauce. Simmer until sauce reduces slightly, about 5 minutes.

    Stir in 2 cups grains medley until heated through, about 2 minutes.

    To serve, spoon beef mixture into lettuce leaves. Top with bell pepper, carrot, bean sprouts, peanuts and green onion.
