Rice & Vegetable Stir-Fry
Heat a medium saucepan over medium. Add oil, then rice. Cook, stirring occasionally, until starting to brown, about 4 minutes. Stir in garlic and ginger and cook until softened, about 30 seconds.
Stir in water and chicken bouillon. Increase heat to high and bring to a boil. Reduce heat to low, cover and simmer until rice is tender, about 15 minutes.
Stir in vegetables, cover and cook until tender-crisp, about 2 minutes. Stir in soy sauce. Let stand 5 minutes before serving.
