
Avocado Toast & Oat Crumble Recipe

Position rack in centre of oven, then preheat to 350°F. Line a baking sheet with parchment.

Stir oats, oil, parsley, thyme, garlic powder, onion powder, paprika and 1 pinch salt on prepared sheet. Spread into an even layer. Bake, stirring occasionally, until golden and toasted, about 8 to 10 minutes. Set aside to cool slightly.

Meanwhile, mash together avocado, lemon juice and remaining 1/4 tsp salt in a medium bowl. Spread evenly over toast. Top with cherry tomatoes, then sprinkle each toast with 1 tbsp oat crumble. Serve immediately.

TIP: Refrigerate remaining oat crumble in an airtight container for up to 1 week.
