
Bacon-Cheddar Mushroom Caps Recipe

Position rack in centre of oven, then preheat to 400°F. Line 2 baking sheets with parchment.

Remove stems from mushrooms and finely chop. Set aside.

Place mushroom caps, hollow side down on a prepared sheet, then brush with oil. Bake until slightly softened, about 8 minutes. Let cool and drain off any liquid. Transfer mushrooms, hollow side up, onto the other prepared sheet.

Place bacon in a large non-stick frying pan. Set over medium and cook until crisp, about 8 minutes. Drain off fat.

Add red pepper, onion, garlic, salt, cayenne and mushroom stems. Cook just until onion starts to soften, about 4 minutes. Stir in broth and cook until almost all the liquid has been absorbed, about 5 minutes. Transfer mixture to a medium bowl.

Add cheddar and cream cheese to mushroom mixture and stir until evenly combined. Spoon into mushroom caps, dividing evenly. Sprinkle with bread crumbs.

Reduce oven to 375°F and bake until stuffing golden, about 12 minutes. Sprinkle with chives and serve.
