Bacon Chocolate Chip Cookies Recipe
Position rack in centre of oven, then preheat to 350°F. Line two baking sheets with parchment.
Lay bacon slices in a large frying pan set over medium. Cook until crisp, about 4 to 5 minutes per side. Transfer to a paper towel-lined plate to cool. (You may need to do this in batches, depending on the size of your pan.)
Meanwhile, whisk flour, baking soda and salt in a medium bowl. Set aside. Beat butter and both sugars in a large bowl, using an electric mixer on medium, until fluffy, about 2 minutes. Beat in eggs, one at a time, until combined. Beat in vanilla extract.
Finely chop cooled bacon. Stir flour mixture into butter mixture, in two additions, until well combined. Stir in chocolate chips and bacon. Scoop 2 tbsp-fuls of dough and arrange 2-in apart on prepared sheets. Press down on cookies lightly with the palm of your hand.
Bake until cookies are just golden around the edges, about 14 to 15 minutes. Let cookies cool on sheets for 2 minutes, then transfer to a rack to cool completely.
