    Preheat oven to 375°F (190°C). Remove any silver skin from the pork tenderloin using a sharp knife. Season with salt and pepper and wrap with bacon. Heat a large skillet over medium-high. Sear the bacon wrapped tenderloin on all sides for about 2 minutes per side or until nicely browned. Transfer to a parchment paper lined baking sheet and roast for 15-17 minutes or until cooked to an internal temperature of 160°F (71°C) and bacon is crisp. Sauté shallots in the same skillet for 1-2 minutes over medium-high heat. Add a little vegetable oil if needed. Add the blueberries, crushing them roughly. Add chicken stock, honey and cider vinegar. Simmer for 3-4 minutes. Finish the sauce with cold butter and stir to combine. Serve over pork.
