Baked Broccoli-Cheddar Tots

Who knew that boiled broccoli could be so delicious? This recipe turns the vegetables into the star of the show. All you have to do is blend the ingredients together in a food processor and rolled out the tots for baking. Bonus: Baked broccoli cheddar tots make great leftovers to send for school lunches.

    Position rack in centre of oven, then preheat to 400°F. Line a baking sheet with parchment.

    Fill a large pot with water and bring to a boil. Add 1 tsp salt. Add broccoli and cook for 1 minute. Drain, then transfer broccoli to a large bowl of ice water and submerge to stop cooking. Drain and pat dry with a kitchen towel.

    Pulse broccoli in a food processor until finely chopped, then transfer to a large bowl. Add egg, cheddar, panko, green onions, black pepper and remaining 1/4 tsp salt. Stir to combine.

    Scoop out 1 heaping tbsp of broccoli mixture and shape into a rectangular tot shape. Place on prepared sheet. Repeat with remaining mixture and arrange tots 1 in apart on sheet.

    Bake until golden brown and crisp, 28 to 30 minutes.
