Baked Cherry & Almond Oatmeal Recipe
Top with a dollop of yogurt for a creamy finish.
Position rack in centre of oven, then preheat to 350°F. Spray eight 180-mL (3/4 cup) custard cups or ramekins with non-stick cooking spray. Arrange cups on a baking sheet.
Stir oats, brown sugar and salt in a large bowl.
Whisk milk, eggs, butter, vanilla and almond extracts in a medium bowl. Whisk into oat mixture until combined.
Divide batter amongst prepared cups. Sprinkle cherries and almonds over batter.
Bake until a knife inserted into centre of cups comes out mostly clean, about 25 to 30 minutes. (Centres will not be completely set.) Set aside to cool for 10 minutes. Top with yogurt before serving, if desired.
