Chicken-Alfredo Baked Tomatoes
Position rack in centre of oven, then preheat to 400°F.
Prepare pasta sauce mix following package directions. Set aside.
Cut tomatoes in half crosswise, then scoop out centres and set aside. Drain hollowed tomatoes upside down on paper towels. Finely chop tomato centre and set aside.
Heat a large frying pan over medium. Add oil, then bacon and onion. Cook, stirring occasionally, until bacon is crisp, about 5 minutes. Stir in chicken. Cook 2 minutes. Remove from heat and stir in Parmesan, basil, parsley and reserved tomato pulp. Stir in 1 cup prepared pasta sauce.
Arrange tomatoes, cut-side up, on a baking sheet. Evenly fill tomatoes with chicken filling, mounding slightly. Sprinkle with mozzarella.
Bake until filling is bubbling and cheese is starting to turn golden brown, about 15 minutes.
