
Roasted Vegetable Sandwich Recipe

Position rack in centre of oven, then preheat to 425°F.

Combine dressing, basil and garlic in a small bowl.

Toss vegetables with 1/3 cup dressing mixture in a large bowl. Arrange vegetables in a single layer on 2 rimmed baking sheets. Roast vegetables, turning halfway through cooking, until golden brown and tender, about 40 minutes.

Spread remaining dressing mixture on cut sides of focaccia. Top bottom bread with roasted vegetables, mozzarella and tomato. Sandwich with remaining focaccia. Slice into 8 wedges. Serve warm or at room temperature.
