Grilled Balsamic Beef Skewers

Broiled or grilled, this creamy balsamic marinade enhances the combination of beef and fresh vegetables. Zucchini, eggplant, peppers and red onions all grill well with these balsamic beef skewers. Cut vegetables in thick slices so they don't cook too fast. Tip: Set aside extra marinade as a dipping sauce.

    Position rack in top third of oven, then preheat to broil.

    Crumble bouillon cube into a small bowl. Add oil gradually and mash into a paste. Stir in Balsamic Mayonnaise and Italian seasoning. Reserve 1/4 cup of mayonnaise mixture in a small cup for dipping sauce.

    Thread steak and vegetables onto skewers. Place skewers on a baking sheet and brush with 1/2 cup of the mayonnaise mixture.

    Broil skewers, turning and brushing with remaining mayonnaise mixture, until steak springs back slightly when pressed, about 8 to 10 minutes for medium-rare. Serve with dipping sauce.
