
Balsamic Braised Baby Potatoes Recipe

Heat a large frying pan over medium. Add bacon. Cook, stirring occasionally, until crispy, about 3 to 5 minutes. Add onion and thyme. Cook, stirring occasionally, until onion softens, about 3 to 4 minutes.

Meanwhile, toss potatoes with vinegar, brown sugar, mustard and salt in a large bowl. Set aside.

Pour broth into bacon mixture. Stir, scraping up any brown bits from bottom of pan. Add potato mixture. Boil, covered, until potatoes are almost fork tender, about 15 minutes.

Remove lid and reduce heat to low. Continue to cook, stirring occasionally, until potatoes are tender and pan is dry, about 8 to 10 more minutes.
