Combine milk, brown sugar, honey, vanilla, cinnamon, nutmeg and salt in a large bowl. Stir in oats. Cover and refrigerate overnight.

Mash two bananas and stir into oatmeal. Thinly slice remaining banana. Divide oatmeal evenly among bowls or small Mason jars. Top with sliced bananas, pecans, and yogurt, if desired.
