Butter chicken on a bun? It doesn't get much better than this! Serve it with a cool and creamy cucumber salad for a knockout lunch or dinner.

    Step 1: Make the rub by mixing all rub ingredients together. Add chicken breasts and rub all over chicken. Place in the fridge, covered, and marinate for at least 1 hour (overnight is best). Step 2: To make cucumber salad, first sprinkle 1/2 tsp salt over cucumber slices, let sit for 30 minutes and drain the juices. Pat dry with a paper towel. Step 3: Soak the sliced red onion in 1 cup of cold water with 1 tsp lime juice for 30 minutes. Drain and pat dry with paper towel. This will get rid of the strong flavour of the red onion. Step 4: Mix all salad ingredients together until combined. Step 5: Butter the insides of the buns. Step 6: Turn the BBQ onto medium, grill chicken breasts until done and juices run clear. Step 7. Grill buns until nice grill marks appear (1-2 minutes). Step 8: Build your burgers!
