    Position rack in centre of oven, then preheat to 350°F.

    Toss potatoes, oil and 1/4 tsp salt on a large baking sheet. Arrange potatoes in one layer. Roast, flipping halfway, until golden brown, about 15 minutes.

    Meanwhile, sprinkle steaks with 1/4 tsp salt and black pepper. Heat a large non-stick frying pan over medium-high. Add steaks. Cook until an instant-read thermometer inserted into thickest part of steak reads 145°F, for medium-rare, about 4 to 6 minutes per side. Transfer steak to a plate and cover with foil.

    Combine spinach, cream and remaining 1/4 tsp salt in a large saucepan set over medium. Cook, stirring often, until spinach wilts, about 4 to 5 minutes.

    Serve steaks with creamy spinach and roast potatoes. Sprinkle blue cheese over steak.
