This blueberry streusel bars recipe is truly a sweet tooth's dream. A decadent mix of buttery streusel topped with ripe blueberry topping, and little lemon zest to lend a tasty contrast. Hint: make two batches at a time because they're sure to fly off the table.

    Position rack in centre of oven, then preheat to 350°F.

    Combine oats, 1 1/4 cups flour, margarine, and brown sugar in a large bowl. Mix until crumbly. Reserve 1 cup oat mixture for topping. Press remaining oat mixture evenly onto bottom of a 8- or 9-in square baking pan.

    Bake until crust is light golden brown, about 13 to 15 minutes. Transfer to a rack to cool slightly.

    Combine blueberries, jam, lemon zest and remaining 1 tsp flour in a medium bowl. Stir to combine. Spread mixture evenly over crust to within 1/2 in of edges. Sprinkle with reserved oat mixture, patting gently.

    Bake until top is light golden brown, about 20 to 22 minutes. Transfer to a rack to cool completely. Cut into 10 bars. Store in a resealable container.
