Birthday Party Ice Cream Cake Recipe

This easy ice cream cake recipe is a decadent way to celebrate birthdays! It's surprisingly simple to make, too; softened ice cream, fudge sauce and ice cream cookies make up the layers. You just need to save time to let it freeze after assembly and decoration for a perfect, party-worthy finish.

    Place ice cream in fridge to soften for 30 minutes. Meanwhile, stir together cookie pieces and chocolate topping in a small bowl. Set aside. Place two sheets of plastic wrap next to one another, overlapping slightly, on a rimmed baking sheet.

    Working quickly, place four ice cream sandwiches side by side in the centre of the plastic wrap to create a rectangular base. Scoop 2 cups of ice cream over top of the ice cream sandwiches, pressing lightly with a spoon to flatten evenly to edges. Spoon cookie mixture over top, leaving a 1/2-in border of ice cream.

    Repeat ice cream layer with remaining 2 cups ice cream, then top with remaining four ice cream sandwiches. Fold plastic wrap over to completely seal the cake. Lightly press ice cream sandwiches down to flatten and adhere to ice cream, and press ice cream in to ensure cake maintains its rectangular shape. Freeze until firm, about 4 hours.

    Unwrap cake, spread evenly with whipped topping and decorate with sprinkles. Place in freezer until whipped topping is firm, about 2 hours. Transfer to a serving tray. Slice and serve immediately.
