Blueberry Bran Muffins Recipe
Position rack in centre of oven, then preheat to 375°F. Line a 12-cup muffin pan with paper liners.
Combine wheat bran and milk in a medium bowl. Set aside for 10 minutes.
Whisk egg, brown sugar, applesauce and vanilla in a large bowl. Whisk in bran mixture.
Wipe medium bowl dry. Stir 1/2 cup all-purpose flour, whole-wheat flour, baking soda, baking powder and salt in same bowl, then stir into egg mixture.
Toss blueberries with remaining 1 tbsp all-purpose flour in same medium bowl. (This will prevent blueberries from sinking to bottom of batter.) Stir gently into batter. Divide batter amongst muffin cups, about 2/3 full.
Bake until tops are golden and spring back when lightly tapped, about 15 to 20 minutes.
