Bran Muffins with a Cinnamon Twist
1. Preheat oven to 400? F (200? C)
In a mixing bowl, combine cereal and milk and let stand until most of the milk has been absorbed by the cereal (about 3 to 5 minutes).
Add the egg and the oil and beat well.
Stir in the raisins.
Stir flour, baking powder, sugar and cinnamon into cereal mixture, until combined.
Prepare muffin tins with muffin cups and fill each cup 2/3 full.
Bake for 18 to 20 minutes, or until the muffins are golden brown and firm. Check at 15 minutes to be sure muffins are not burning.
