Bran Muffins with a Cinnamon Twist

Fibre is an important part of your diabetes meal plan. Enjoying these yummy, cinnamon-y bran muffins is an easy way to get some fibre into your diet. Try them for breakfast or for a snack or dessert.

Ingredients

    1. Preheat oven to 400? F (200? C)

    In a mixing bowl, combine cereal and milk and let stand until most of the milk has been absorbed by the cereal (about 3 to 5 minutes).

    Add the egg and the oil and beat well.

    Stir in the raisins.

  • 5

    Stir flour, baking powder, sugar and cinnamon into cereal mixture, until combined.

    Prepare muffin tins with muffin cups and fill each cup 2/3 full.

    Bake for 18 to 20 minutes, or until the muffins are golden brown and firm. Check at 15 minutes to be sure muffins are not burning.
