Bran Muffins Recipe
Position rack in centre of oven, then preheat to 400°F. Mist 9 muffin cups with cooking spray or line with paper liners.
Combine cereal and milk in a large bowl and let stand until most of the milk has been absorbed by the cereal, about 3 to 5 minutes.
Add the egg and oil and mix well to combine.
Stir in the raisins.
Add flour, sugar, baking powder and cinnamon and mix just until combined.
Divide batter among muffin cups, filling each about 2/3 full. Sprinkle oats over top.
Bake until the muffins are golden brown and tops are firm, 15 to 20 minutes.
