Breaded Veal & Fettuccine Alfredo
Position rack in centre of oven, then preheat to 325°F.
Beat eggs in a shallow bowl. Pour bread crumbs into another shallow bowl.
Dip veal cutlets in eggs, then bread crumbs until evenly coated.
Heat a large non-stick frying pan over medium-high. Add 2 tbsp oil, then half of veal. Cook until an instant-read thermometer inserted into thickest part of cutlets reads 160°F, about 3 minutes per side. Transfer to a paper towel-lined plate to drain fat, then place on a baking sheet and keep warm in oven. Repeat with remaining 2 tbsp oil and veal cutlets.
Cook Knorr Sidekicks in a medium saucepan following package directions. Stir in tomatoes just before serving with veal.
