Position rack in centre of oven, then preheat to 350°F. Line a 9x13-in baking pan with foil.

Combine brown sugar, cocoa, garlic, onion powder, salt and cayenne pepper in a small bowl. Rub mixture all over both sides of ribs. Place in prepared pan.

Bake for 1 hour.

Cover barbecue grates with foil. Preheat barbecue to medium-high.

Transfer ribs from pan to grill. Barbecue, turning and brushing occasionally with barbecue sauce, until ribs are tender, about 20 minutes.
