Apple, Bacon & Broccoli Salad Recipe
Heat a frying pan over medium-high. Add bacon and cook, stirring occasionally, until crisp, about 5 minutes. Transfer to a paper towel-lined plate to drain. Reserve.
Separate broccoli stalk from florets. Trim woody end of stalk, then peel. Thinly slice stalk and transfer to a large bowl. Thinly slice florets and add to bowl.
Add 1/2 cup walnuts, apple and half of the bacon.
Whirl remaining 1/2 cup walnuts in a food processor until finely ground. With processor running, pour in olive oil, then lemon juice, maple syrup, salt and pepper. Whirl until combined. Add vinaigrette to bowl and toss well to coat. Garnish with remaining bacon before serving.
