Cheddar Cheese & Broccoli Casserole Recipe

Broccoli florets smothered in a creamy cheese sauce make this a family favourite side dish. And it's worth making the cheese sauce from scratch to get amazing results. Tip: Cooking the flour out in the margarine and onion helps add flavour and thicken the sauce for your broccoli casserole, so don't rush through this step.

    Position rack in centre of oven, then preheat to 350°F. Spray a 2-L baking dish with non-stick cooking spray.

    Heat a large saucepan over medium-high. Add margarine, then onion. Cook, stirring often, until softened, about 4 minutes. Reduce heat to. medium. Sprinkle over flour. Cook, stirring constantly, 2 minutes.

    Gradually stir in milk. Bring to a boil. Stir in chicken stock until stock melts and sauce is thickened, about 2 minutes.

    Remove from heat, then stir in 1 cup cheese. Let stand 1 minute. Stir in broccoli and mustard. Transfer mixture into prepared dish.

    Bake for 20 minutes. Sprinkle remaining 1/2 cup cheese over casserole. Continue baking until cheese is melted, about 5 more minutes. Let stand 10 minutes before serving.
