Broccoli with Toasted Garlic & Parsley Crumbs
Cut broccoli tops into bite-size florets. Slice off and discard tough ends. Peel remaining stems and slice diagonally. Process bread in food processor until bread crumbs form. There should be about 1/2 cup (125 mL). Finely grate peel from lemon and squeeze out 1 Tbsp (15 mL) juice. Bring large pot of water to a boil. Add broccoli and cook just until bright green and tender, about 3 minutes; drain. Meanwhile, melt Becel® Buttery Taste margarine* in large skillet over medium heat and cook garlic, stirring occasionally, 1 minute. Stir in lemon peel and juice. Stir in bread crumbs and cook until no longer soggy, about 3 minutes. Stir in parsley. Arrange broccoli on serving platter, then sprinkle with bread crumbs. *Becel® Gold in Quebec
