Herbed Breadcrumbs & Broccoli

Liven up tonight's broccoli recipe with this simple yet savoury combination of flavours. Sautéed lemon-garlic bread crumbs give tender-crisp broccoli a zesty, extra crunchy finish that will have everyone cleaning their plates faster than usual. (Did we mention it only takes 15 minutes to make?)

    Cut broccoli crown into bite-size florets. Slice off and discard tough ends from stem, then cut into 1/2-in rounds.

    Add bread to a food processor. Whirl until it turns into bread crumbs. You should have about 1/2 cup.

    Bring large pot of water to a boil over medium-high. Add broccoli. Cook until broccoli is bright green and tender, about 3 minutes. Drain through a colander.

    Heat a large frying pan over medium. Add margarine, then garlic. Cook, stirring often, 1 minute. Stir in lemon juice and zest. Stir in bread crumbs and cook until toasted, about 3 minutes. Stir in parsley.

    Arrange broccoli on a serving platter, then sprinkle with bread crumb mixture.
