Brown-Sugar & Mustard Glazed Ham
Position rack in centre of oven, then preheat to 325°F.
For the Glaze: Stir brown sugar with honey, Dijon and orange juice in a small bowl.
For the Ham: Score skin of ham, using a very sharp knife, into a diamond cross-hatch pattern. Place ham in a shallow roasting pan just big enough to hold it.
Bake for 15 minutes. Then generously brush ham with sugar mixture. Continue baking until ham is heated through and until an instant-read thermometer inserted into centre of ham reads 160°F, approximately 30 minutes per kg. (To form a rich glaze, continue brushing with mixture every 10 minutes.) Transfer ham to a platter.
Add any remaining glaze to pan juices. Scrape up all browned bits from pan bottom and set pan over medium. Boil gently, uncovered, stirring often, until sauce is slightly reduced, about 5 to 10 minutes. Pour over sliced ham.
