
Homemade Buffalo Chicken Bites

Heat a large non-stick frying pan over medium. Add 1/2 tbsp margarine, then chicken. Cook until an instant-read thermometer inserted into thickest part of breast reads 165°F, about 4 minutes per side. Transfer chicken to a cutting board. Cut into 3/4-in pieces and cover with foil to keep warm.

Stir remaining 1 1/2 tbsp margarine and pepper sauce in a medium microwave-safe bowl. Microwave on high until melted, about 15 seconds. Stir until well mixed. Add chicken. Toss to coat.

Alternately thread celery, tomatoes and chicken on 36 wooden skewers. Arrange skewers on a serving platter. Serve with dressing on the side for dipping.
