Buttermilk & Garlic Mashed Potatoes
Cover potatoes with water in a pot set over high. Bring to a boil, then reduce heat to medium-low. Gently boil until potatoes are fork-tender, about 15 minutes. Drain potatoes through a colander.
Add buttermilk and garlic to same pot set over low. Heat until mixture is just hot. (Do not let it boil.) Return potatoes to pot along with margarine. Mash to your desired consistency. Garnish with chives.
