Butternut Squash Chickpeas and Rice
Combine soup and rice in a medium saucepan set over medium-high. Bring to a boil, then reduce heat to medium-low. Simmer, covered, 10 minutes.
Add chickpeas. Simmer until rice is tender, about 5 to 10 more minutes. (If rice becomes dry before reaching desired texture, add water as needed.)
Divide amongst plates. Garnish with cheese, if desired.
