Butternut Squash Chickpeas and Rice

The secret to full-flavoured rice is in the cooking liquid. Who needs water when you can use anything from chicken broth to coconut milk and even butternut squash soup! (They also eliminate the need for any extra sauces with your dish.) Once rice is cooked, add chickpeas and fresh shavings of parmesan to serve.

    Combine soup and rice in a medium saucepan set over medium-high. Bring to a boil, then reduce heat to medium-low. Simmer, covered, 10 minutes.

    Add chickpeas. Simmer until rice is tender, about 5 to 10 more minutes. (If rice becomes dry before reaching desired texture, add water as needed.)

    Divide amongst plates. Garnish with cheese, if desired.
