Cajun Beans & Rice Recipe
Heat a large non-stick frying pan over medium. Add oil, celery, onion, garlic and Cajun seasoning. Cook until vegetables are tender, about 5 minutes.
Stir in beans, bell pepper, rice, paprika, salt and black pepper until combined. Pour in broth. Bring to a boil, then reduce heat to medium-low. Simmer, covered, until rice is tender and liquid is absorbed, about 8 to 10 minutes.
Remove from heat. Gently stir in corn and parsley.
