Cajun-Spiced Roast Turkey Recipe
Position rack in bottom third of oven, then preheat to 325°F. Place a rack in a large roasting pan.
Remove turkey from packaging. Remove neck and giblets. Pat turkey dry with paper towels.
Stir butter, cayenne, garlic powder, salt, onion powder, oregano, black pepper, smoked paprika and thyme in a small bowl until combined. Rub butter mixture under and over turkey skin. Tie ends of drumsticks together with butcher's twine to secure. Arrange turkey, breast-side-up, on prepared rack.
Roast turkey until an instant-read thermometer inserted into thickest part of thigh reads 180°F and leg moves easily when twisted and juices run clear, about 3 hours to 3 hours and 30 minutes. Set aside and let stand, covered loosely with foil, at least 30 minutes before carving.
