Stir mayonnaise with sriracha in a small bowl.
Halve cucumbers lengthwise, then cut each into 3 strips. Cut avocado into strips. Cut carrot into matchsticks.
Brush tortillas with sesame oil.
Divide vegetables amongst tortillas. Add 1 slice smoked salmon to each.
Drizzle mayonnaise mixture over tortillas. Roll up and cut into 1-in thick rolls. Drizzle with more mayonnaise mixture and toasted sesame seeds, if desired.
