Campfire french fries
Fill a large pot with oil until it is about 1-in deep in the pan (about 3 to 4 cups.) Set over medium. Clip a candy thermometer on side of pot. Heat until oil reaches 375°F on thermometer.
Add half of potatoes, then half of onion. Do not crowd pan. Fry, stirring occasionally, until golden and crispy, about 12 to 15 minutes. Remove using a strainer and drain on paper towels. Transfer to a large bowl. Repeat with remaining potatoes and onions.
Toss fries and onions with Italian seasoning, garlic salt and salt until coated. Serve immediately.
