Cast Iron Campfire Pizza

When it comes to fun, family-friendly camping meal ideas, this easy-prep recipe quite possibly tops the list with a unique and oh-so-delicious baking technique. Using a cast-iron pan over a fire or barbecue (read: no full kitchen required), and simple ingredients like store-bought dough, tomato sauce, cheese and pepperoni, enjoy this smoky, deliciously thick, crispy-bottomed pizza in the woods (or your backyard!).

    Divide and shape pizza dough into two balls, pinching bottoms. Place each ball of dough on a floured surface (or floured bowl), and sprinkle top with additional flour; rest at room temperature.

    Prepare open campfire with a grate (or preheat oven to 475°F, if using oven or BBQ). Brush 2 tbsp of the olive oil on large 10- to 12-inch cast iron skillet.

    Roll out dough on a floured surface or using hands, press and stretch dough then using fisted knuckles, stretch to a 10- to 12-inch circle, leaving a 3/4-inch border. Place on skillet, pressing outwards to fit the pan; let rest and rise (about 15 minutes).

    Place skillet over campfire and cook on a grate until bottom is golden, rotating the pan, 5 to 8 minutes (depending on heat level). Remove pan from fire and carefully flip dough to have toasted side facing up.

    Evenly spread half of the pizza sauce leaving a border. Top with half of the mozzarella, pepperoni, tomato and mushroom (optional).

    Cover with cast iron lid and cook until cheese is melted. Remove lid and continue cooking until bottom is browned and cooked through (about 5 to 8 minutes, depending on heat level).
    TIP: If your cast iron pan comes without a lid, grab a baking tray and cover with aluminum foil as your lid instead.

    Transfer pizza to a cutting board, wipe skillet and repeat with remaining oil, dough and ingredients.
