
Caramelized Apple Salad with Grilled Chicken

Ready in just over a half-hour, this apple salad recipe makes a great stand-alone meal. The shortcut here? Pre-cooked chicken breasts. Cook them ahead of time (batch-cooking is a great thing!), buy them, or shred a whole rotisserie chicken—the end result is the same: a quick, delicious dinner that makes less mess.

Heat a large frying pan over medium-high. Add margarine, then apple and onion. Cook, stirring occasionally, until tender, about 4 minutes. Reduce heat to medium. Cook, stirring occasionally, until apple and onion are golden brown, about 20 minutes.

Meanwhile, thinly slice chicken and keep warm. Spoon warm apple mixture over greens, then top with chicken and walnuts. Drizzle dressing overtop.
