Classic Carrot Soup Recipe
Heat a large pot over medium-high. Add margarine, then onion. Cook, stirring frequently, until onion is deep golden brown, about 10 minutes.
Stir in vinegar and cook until absorbed, about 1 minute. Stir in paprika and cook 30 seconds.
Add water, concentrated stock and carrots. Increase heat to high and bring to a boil. Reduce heat to low and simmer until carrots are tender, about 20 minutes.
Process, in batches, in a blender until smooth.
