Cauliflower Gratin Recipe
Position rack in centre of oven, then preheat to 350°F.
Bring a large pot of salted water to a boil. Add cauliflower and boil until tender-crisp, about 5 to 6 minutes. Drain and set aside.
Heat a large frying pan over medium. Add 3 tbsp of the butter, then garlic and cook 1 minute. Whisk in flour and mustard powder and cook for 1 minute. Whisk in milk gradually, then cook, stirring constantly, until thickened, about 5 minutes. Stir in cheese, salt and pepper and cook until melted, about 1 minute.
Add cauliflower and toss to coat. Pour into a 9x13-inch baking dish, cover with foil and bake until cheese mixture is bubbling at edges of dish, about 40 minutes.
Microwave remaining 1 tbsp butter in a small bowl until melted, about 30 seconds. Stir in breadcrumbs and Parmesan then sprinkle mixture over cauliflower. Broil until golden, checking often, about 2 minutes.
