Cheesy Chicken Nachos Recipe
Preheat barbecue to medium-high.
Sprinkle chicken breasts on both sides with Tex-Mex spice blend. Oil grill. Barbecue chicken for 4 minutes. Turn and continue barbecuing until an instant-read thermometer inserted into thickest part of breast reads 165°F, about 4 more minutes. Transfer chicken to a cutting board and let cool 5 minutes. Cut into cubes.
Heat a medium saucepan over medium. Add Alfredo pasta sauce and chicken. Keep warm on stovetop.
Arrange one-third of tortilla chips in a single layer on a microwave-safe platter. Top with one-third chicken and sauce mixture, then sprinkle over 1/2 cup cheddar. Repeat layering two more times.
Microwave until cheese melts, about 90 seconds. Remove from microwave and top with tomatoes, jalapenos, green onions and olives. Serve with sour cream on the side.
