Bacon, Egg & Cheese Hash Browns
Heat a large non-stick frying pan over medium. Add bacon. Cook until crispy, about 1 to 2 minutes per side. Transfer bacon to a paper towel-lined plate.
Discard all but 3 tbsp fat from pan. Add onions and has browns to pan. Increase heat to medium-high. Cook, stirring occasionally, until hash browns are golden, about 14 minutes. Stir in cheese.
Make 6 small wells in potato mixture. Crack an egg into each well. Top with bacon slices. Cook, covered, until egg whites are firm and yolks are cooked to desired doneness, about 3 to 4 minutes. Remove from heat. Let stand, covered, 1 minute before serving.
