A complex dish, made simple! This quick and easy Italian chicken skillet recipe includes a chicken breast simmered in marinara sauce with artichoke and olives, and is served over a bed of perfectly seasoned, long grain and wild rice.

    Season chicken with salt and black pepper. Heat a large non-stick frying pan set over medium-high. Add oil, then chicken. Cook until browned, about 1 to 2 minutes per side.

    Add marinara sauce, artichoke and olives. Simmer, covered, until an instant-read thermometer inserted into thickest part of breast reads 165°F, about 15 minutes.

    Stir spinach into sauce. Sprinkle cheese over chicken. Continue cooking, covered, until spinach is wilted and cheese is melted, about 2 minutes.

    Meanwhile, prepare rice blend following package directions. Serve rice with chicken.
