Oatmeal Cranberry Cookies Recipe

This extra-chewy oatmeal cranberry cookies recipe (thank the dried fruit) is easy to bake up anytime, whether you're craving something sweet, need a sweet lunchbox treat, or craving an after-dinner snack. Bonus: Fibre-rich oats give this recipe a healthful boost to feel good about.

    Position rack in centre of oven, then preheat to 350°F.

    Combine oats, flour, baking soda and salt in a medium bowl. Set aside.

    Beat margarine with brown sugar in a large bowl, using an electric mixer on medium, until creamy, about 3 minutes. Beat in vanilla. Reduce speed to low. Gradually beat in oat mixture until just combined. Stir in cranberries.

    Drop dough by tablespoonfuls onto two baking sheets, 2 in apart.

    Bake until edges are golden, about 11 minutes. Cool sheets 2 minutes on a rack. Then transfer cookies to rack and let cool completely.
