Oatmeal Cranberry Cookies Recipe
Position rack in centre of oven, then preheat to 350°F.
Combine oats, flour, baking soda and salt in a medium bowl. Set aside.
Beat brown sugar and margarine in a large bowl, using an electric mixer on medium, until creamy, about 3 minutes. Beat in vanilla. Reduce speed to low. Gradually beat in oat mixture until just combined. Stir in cranberries.
Drop dough by tablespoonfuls onto two baking sheets, 2 in apart.
Bake until edges are golden, about 11 minutes. Cool sheets 2 minutes on a rack. Then transfer cookies to rack and let cool completely.
